Ultimate BBQ Veggie Kabobs: A Grilled Masterpiece for Every Season

Colorful, flavorful grilled vegetable skewers with Mediterranean-inspired marinade, perfect for summer cookouts or year-round enjoyment.

 

Ingredients

  • 1 yellow squash or zucchini, cut into half moons
  • 8 ounces baby bella mushrooms, trimmed
  • 1 cup grape tomatoes
  • 6 ounces brussels sprouts, halved, (it helps to microwave the brussels briefly so they are a bit softer and will go through the skewers more easily)
  • 1 medium onion, cut into chunks
  • 34 garlic cloves, minced
  • 1/2 cup chopped fresh parsley
  • kosher salt
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon Aleppo pepper (or 1/2 to 1 teaspoon red pepperflakes)
  • 1/3 cup extra virgin olive oil
  • juice of two lemons

Instructions

  1. Prepare 8-10 skewers. If using wooden skewers, soak in water for 30+ minutes.
  2. Combine prepared vegetables, garlic, and parsley in a large bowl. Season with salt, oregano, and pepper.
  3. Add olive oil and lemon juice, tossing until vegetables are well coated.
  4. Let marinate for 20 minutes while heating the grill (or refrigerate for several hours).
  5. For gas grill: Heat to medium and oil grates. Thread vegetables onto skewers, grill for 10 minutes, turning occasionally, until charred in spots and tender-crisp.
  6. For oven method: Heat oven to 400°F. Arrange kabobs on a large sheet pan and roast for 15 minutes, turning occasionally, until vegetables are cooked through.
  7. Serve immediately for best flavor and texture.
