Classic Beef Broccoli Stir-Fry

Ingredients

  • 1 lb beef sirloin, thinly sliced against the grain
  • 2 cups broccoli florets, cut into bite-sized pieces
  • 2 tbsp vegetable oil, divided
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 1 tbsp oyster sauce (optional)
  • 1 tsp brown sugar (optional)
  • 1 tsp sesame oil (optional)
  • 2 green onions, sliced diagonally for garnish
  • 1 tsp toasted sesame seeds for garnish (optional)

Instructions

  1. In a medium bowl, toss the beef slices with the cornstarch mixture and set aside for 10 minutes.
  2. Heat 1 tbsp oil in a wok or large skillet over high heat.
  3. Add garlic and ginger, stir for 30 seconds until fragrant but not browned.
  4. Add marinated beef in a single layer and stir-fry until browned, about 2-3 minutes, then remove to a plate.
  5. Add remaining oil to the wok and add broccoli florets, stir-frying for 3-4 minutes until bright green and crisp-tender.
  6. Return beef to the wok, add soy sauce and optional oyster sauce and brown sugar.
  7. Stir everything together for 1-2 minutes until well combined.
  8. If sauce needs thickening, add a bit more cornstarch slurry and stir until it reaches desired consistency.
  9. Remove from heat, drizzle with optional sesame oil, and garnish with green onions and sesame seeds.
  10. Serve hot over rice or noodles.

  • For maximum tenderness, freeze beef for 15-20 minutes before slicing thinly against the grain.
  • Blanching the broccoli briefly before stir-frying ensures perfect texture and bright green color.
