Beef Enchilada Casserole

A hearty, flavorful one-pan Mexican-inspired casserole that’s easier than traditional enchiladas but just as delicious.

 

Ingredients

  • 1 1/2 pounds ground beef
  • 1 yellow onion, chopped
  • 23 tablespoons taco seasoning
  • 34 cups red enchilada sauce
  • 12 corn tortillas
  • 1 cup dry rice
  • 2 poblano peppers, chopped
  • 1/4 cup chopped green onions and/or cilantro
  • 1 cup black beans
  • 1 1/2 cups shredded Mexican cheese
  • For Serving: plain Greek yogurt, shredded lettuce/green onion/cilantro, cubed or sliced avocado

Instructions

  1. Preheat oven to 400°F.
  2. Cook beef, onion, and taco seasoning in a large skillet until beef is browned (about 10 minutes). Season with salt.
  3. Spread 1 cup of enchilada sauce in a 9×13 inch baking dish, then layer 6 tortillas on top.
  4. Add the beef mixture, 1-2 cups more enchilada sauce, dry rice, poblano peppers, green onions, and black beans.
  5. Pour 1 1/2 cups water over the mixture, season with salt, gently stir, and spread evenly.
  6. Layer remaining 6 tortillas on top, add final cup of enchilada sauce, and top with cheese.
  7. Cover and bake for 30 minutes, then uncover and bake 10-20 minutes more until bubbly.
  8. If rice is still firm, add 1/3 cup water and bake 10 more minutes.
  9. Serve with desired toppings.
