  • 1 large onion, finely chopped
  • 5 garlic cloves, minced
  • 1 cup cooked lentils
  • 1 tablespoon miso paste
  • 2 cups vegetable broth, divided
  • 1 teaspoon lemon juice
  • 1/2 cup unsweetened plant-based cream
  • 1 tablespoon cornstarch mixed with 1 tablespoon water
  • 1/4 cup chopped fresh parsley
  • Salt and black pepper, to taste
  • Potato Topping:

  • Olive oil for brushing
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 390°F (200°C).
  2. Heat olive oil in a large skillet over medium-high heat. Cook ground beef for 5-7 minutes until browned. Season lightly, then transfer to a bowl.
  3. Add more oil if needed and cook mushrooms in batches for 3-4 minutes until golden. Transfer to the bowl with beef.
