  • 1 medium onion, finely minced
  • 1/4 cup breadcrumbs
  • 1 teaspoon black pepper
  • 1/2 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 pound ground beef
  • 1 medium egg
  • 2 tablespoons chopped parsley
  • 4 medium potatoes, peeled and thick-sliced
  • 1/2 cup vegetable oil
  • 1 cup sliced mushrooms
  • For the Tomato Sauce:

2 tablespoons olive oil

  • 1 tablespoon tomato paste
  • 3 medium tomatoes, pureed
  • 2 garlic cloves, minced
  • 1 teaspoon salt
  • 1 1/2 cups hot water

For the Topping:

  • 2 medium tomatoes, sliced
  • 1 green bell pepper, sliced
  • 2 tablespoons chopped parsley

Instructions

  1. Preheat oven to 400°F. Combine onion, breadcrumbs, black pepper, cumin, paprika, salt, ground beef, egg, and parsley in a large bowl. Mix gently and shape into oval meatballs.
  2. Fry potato slices in vegetable oil until golden. Drain on paper towels. Sauté mushrooms until lightly browned.
  3. Brown meatballs on all sides in the same pan. Transfer to a plate.
  4. Make sauce by sautéing garlic in olive oil, adding tomato paste, pureed tomatoes, salt, and hot water. Simmer for 5 minutes.
  5. Layer potatoes in a baking dish, arrange meatballs and mushrooms on top. Pour sauce over everything and add sliced tomatoes and bell peppers.
  6. Bake for 25-30 minutes until bubbling and meatballs reach 160°F. Let rest 5 minutes, garnish with parsley before serving.

Notes
