  • For the Meatballs:
  • 2 tablespoons olive oil, divided
  • 1/3 cup finely chopped yellow onion
  • 1 1/2 pounds ground beef
  • 1/2 cup seasoned panko breadcrumbs
  • 2 teaspoons dried parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup whole milk
  • 2 large eggs, lightly beaten
  • 1 teaspoon minced garlic
  • 1 tablespoon ketchup
  • 1 tablespoon Dijon-style mustard
  • 1 tablespoon Worcestershire-style sauce
  • For the Onion Mushroom Gravy:
  • 1 cup yellow onion, sliced into quarters
  • 8 ounces white button mushrooms, sliced
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 1/2 cups beef broth, divided
  • 1 tablespoon Dijon-style mustard
  • 1 tablespoon Worcestershire-style sauce
  • 1 tablespoon soy sauce
  • 23 sprigs fresh thyme
  • 12 teaspoons apple cider vinegar (optional)
  • Salt and black pepper, to taste
  • For Serving:
  • Creamy mashed potatoes

Instructions

  1. Heat 1 tablespoon olive oil in a skillet over medium heat. Cook onions until soft, add garlic and cook 30 seconds more. Cool completely.
  2. Combine ground beef, breadcrumbs, parsley, salt, pepper, milk, eggs, ketchup, mustard, Worcestershire sauce, and cooled onion mixture in a large bowl.
  3. Form into 20 meatballs, about 1½ inches each.
  4. Brown meatballs in remaining oil in batches, then set aside.
  5. In the same skillet, cook sliced onions and mushrooms until softened and beginning to brown.
  6. Add butter, melt, then stir in flour and cook 2 minutes to form a roux.
  7. Gradually whisk in 2 cups beef broth until smooth, then add mustard, Worcestershire sauce, soy sauce, thyme, and vinegar if using.
  8. Return meatballs to skillet, reduce heat to medium-low, cover, and simmer 15-20 minutes until meatballs reach 160°F internal temperature.
  9. Adjust gravy thickness with remaining broth if needed, season to taste, and remove thyme sprigs.
  10. Serve over mashed potatoes.
