Beef Mushroom Stir Fry Rice

Ingredients

  • 1 lb beef strip steaks, thinly sliced against the grain
  • 2 cups sliced mushrooms (button, cremini, or shiitake)
  • 3 cups cooked jasmine rice (preferably day-old)
  • 3 tbsp low-sodium soy sauce
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp vegetable oil or peanut oil
  • 2 green onions, sliced diagonally
  • 1 tbsp oyster sauce (optional)
  • 1 tsp brown sugar (optional)
  • 1 tsp sesame oil (optional)
  • 1/2 red bell pepper, thinly sliced (optional)
  • 1 small carrot, julienned (optional)
  • 1/2 cup bean sprouts (optional)
  • 1 tbsp toasted sesame seeds (optional)

Instructions

  1. Prepare all ingredients before heating the pan. Slice beef thinly against the grain.
  2. Heat oil in a large skillet or wok over high heat until shimmering.
  3. Add beef slices in a single layer and stir-fry until browned, about 2 minutes. Remove and set aside.
  4. In the same pan, add garlic and ginger. Stir quickly for 15-30 seconds until aromatic.
  5. Add mushrooms and stir-fry until they release moisture and begin to brown, 3-4 minutes.
  6. If using optional vegetables like bell peppers or carrots, add them now and stir-fry for 1-2 minutes.
  7. Return beef to the pan, pour soy sauce over (and oyster sauce if using), and toss to coat evenly.
  8. Add the cooked rice, breaking up any clumps with your spatula. Toss everything together.
  9. Stir-fry for 2 minutes until the rice is heated through and has absorbed the flavors.
  10. Finish with a drizzle of sesame oil for aroma, then fold in bean sprouts if using.
  11. Transfer to serving plates or bowls, garnish with sliced green onions and sesame seeds.

Notes

For the best texture, use cold, day-old jasmine rice. Freshly cooked rice often becomes gummy when stir-fried.

Partially freezing beef for 15-20 minutes makes it easier to slice thinly.

Don’t overcrowd your pan – work in batches if needed to maintain high heat.

This recipe is very adaptable – feel free to add other vegetables like snap peas, broccoli, or bok choy.
