Beef Onion Mushroom Stir Fry

  • 1 lb beef sirloin, thinly sliced against the grain
  • 1 large yellow onion, sliced into half-moons
  • 2 cups mushrooms, sliced (about 8 oz)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 tablespoon sesame oil (preferably toasted)
  • 1 tablespoon vegetable oil
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon brown sugar
  • ¼ teaspoon freshly ground black pepper
  • 1 teaspoon cornstarch mixed with 1 tablespoon water
  • 3 green onions, sliced diagonally
  • 1 teaspoon toasted sesame seeds
  • 4 cups cooked rice, for serving

Instructions

  1. Place beef in freezer for 15-20 minutes to firm up, then slice thinly against the grain.
  2. Marinate sliced beef with 1 tablespoon soy sauce, ½ teaspoon cornstarch, and a pinch of black pepper for 10-15 minutes.
  3. Prepare all vegetables and combine remaining soy sauce, oyster sauce, and brown sugar in a small bowl.
  4. Heat a wok or large skillet over high heat. Add vegetable oil and swirl to coat.
  5. Add marinated beef in a single layer (working in batches if needed) and sear undisturbed for 30 seconds.
  6. Stir-fry beef until 75% cooked but still slightly pink, about 1-2 minutes. Transfer to a clean plate.
  7. Add sesame oil to the same pan, then add white parts of green onions, garlic, and ginger. Stir-fry for 15-30 seconds until fragrant.
  8. Add sliced onions and stir-fry for 1-2 minutes until beginning to soften.
  9. Add mushrooms and continue stir-frying for 2-3 minutes until mushrooms release moisture and begin to brown.
  10. Pour combined sauce ingredients into the pan. Stir well and let bubble for 30 seconds.
  11. Return beef and any accumulated juices to the pan. Toss to coat with sauce and cook about 1 minute more.
  12. Stir the cornstarch slurry again, then drizzle into the pan while stirring. Cook 30-60 seconds until sauce thickens and becomes glossy.
  13. Turn off heat and sprinkle with green parts of green onions and sesame seeds.
  14. Serve immediately over hot steamed rice.
