Beef Peanut Noodles

Asian-inspired noodles

  • 200g beef sirloin, thinly sliced against the grain
  • 200g rice noodles
  • 1/4 cup roasted peanuts, roughly chopped, plus extra for garnish
  • 3 tbsp soy sauce (preferably low-sodium)
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, finely grated
  • 2 green onions, thinly sliced, whites and greens separated
  • 1 tbsp sesame oil (toasted variety)
  • 3 tbsp natural peanut butter (smooth or crunchy)
  • 1 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 1 tbsp vegetable oil
  • 1 medium red bell pepper, thinly sliced
  • 1 medium carrot, julienned
  • 1 cup bean sprouts, rinsed and drained
  • 1 lime, cut into wedges for serving
  • Sriracha or chili oil to taste (optional)
  • 1/4 cup fresh cilantro, roughly chopped (optional)

Instructions

  1. Cook the rice noodles according to package instructions until al dente. Drain, rinse under cold water, and set aside.
  2. In a small bowl, whisk together peanut butter, 2 tbsp soy sauce, brown sugar, rice vinegar, and 2-3 tbsp warm water until smooth and pourable.
  3. Slice the beef sirloin against the grain into thin strips. Pat dry and season lightly with salt and pepper.
  4. Heat a wok or large skillet over high heat until smoking. Add vegetable oil and swirl to coat.
  5. Add beef in a single layer and cook undisturbed for 1 minute until browned on one side.
  6. Quickly stir-fry for another 1-2 minutes until just cooked through but still tender. Remove from wok and set aside.
  7. Reduce heat to medium and add white parts of green onions, garlic, and ginger. Stir-fry for 30 seconds until fragrant.
  8. Add bell peppers and carrots, stir-frying for 2-3 minutes until slightly softened but still crisp.
  9. Return beef to the wok along with any accumulated juices. Add remaining soy sauce and drizzle with sesame oil.
  10. Add prepared noodles and pour peanut sauce over everything. Gently toss with tongs until evenly coated, about 1-2 minutes.
  11. Add bean sprouts and half the chopped peanuts, tossing quickly to incorporate.
  12. Remove from heat and transfer to serving dish. Garnish with remaining peanuts, green onion tops, and cilantro if using.
  13. Serve immediately with lime wedges on the side.

Notes

  • For extra heat, add a sliced red chili with the garlic and ginger.
  • Freeze the beef for 15-20 minutes before slicing for easier thin cuts.
  • The sauce can be made up to 3 days ahead and stored in the refrigerator.
