Beef Ragu with Gnocchi

Tender beef slow-cooked with herbs and mushrooms served over pillowy homemade Parmesan gnocchi.

For the Beef & Mushroom Ragu

  • 2 pounds beef chuck
  • 2 medium red onions, chopped
  • 6 garlic cloves, crushed
  • 8 ounces mushrooms, sliced (cremini, button, or mixed)
  • 3 cups tomato purée (about 26 ounces)
  • 2 fresh rosemary sprigs
  • 5 fresh thyme sprigs
  • 2 bay leaves
  • 2 cups beef stock
  • 2 teaspoons sugar
  • Salt and black pepper, to taste
  • Olive oil, for searing

For the Parmesan Gnocchi

  • 2 pounds baking potatoes (Russet or another fluffy potato)
  • ½ cup finely grated Parmesan
  • 2 egg yolks
  • 1 cups all-purpose flour
  • Salt, to taste

Instructions

  1. Preheat oven to 325°F. Season beef with salt and pepper, then sear in hot oil until deeply browned on all sides. Remove and set aside.
  2. In the same pot, cook onions and garlic until softened. Add mushrooms and cook until browned.
  3. Add tomato purée, herbs, beef stock, sugar, salt and pepper. Return beef to pot with any juices.
  4. Cover and transfer to oven. Braise for 3-4 hours until beef is fall-apart tender.
  5. Meanwhile, bake potatoes until tender (about 45-60 minutes at 400°F). Scoop out flesh while warm.
  6. Mash potatoes until smooth, add Parmesan and egg yolks. Gradually mix in flour to form a soft dough.
  7. Roll dough into ropes, cut into small pieces. Optional: Roll each piece over fork tines for ridges.
  8. When beef is tender, remove from oven. Shred meat and return to sauce. Simmer to thicken if needed.
  9. Cook gnocchi in salted boiling water until they float (1-2 minutes). Transfer directly to ragu.
  10. Gently combine and serve hot with additional grated Parmesan if desired.

Notes
