Beef Sauerkraut Pineapple Casserole

  • 1 pound ground beef (80/20 lean-to-fat ratio)
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon brown sugar
  • 1 teaspoon paprika (sweet or smoked)
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup sauerkraut, drained and rinsed
  • 1 cup pineapple chunks, drained (reserve 2 tablespoons juice)
  • 1/2 cup sour cream
  • 1 cup sharp cheddar cheese, shredded
  • Optional: 1/2 cup red bell pepper, diced
  • Optional: 1/2 cup crushed ritz crackers or breadcrumbs
  • Optional: 2 tablespoons green onions, sliced (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a 2-quart casserole dish.
  2. Heat a large skillet over medium-high heat. Add the ground beef and cook for 2 minutes until it begins to brown.
  3. Add the diced onion and minced garlic. Continue cooking for 5-7 minutes until beef is no longer pink and onions are translucent. Drain excess fat.
  4. Stir in Worcestershire sauce, Dijon mustard, brown sugar, paprika, thyme, salt, and pepper. Cook for 1 minute.
  5. If using bell pepper, add it now and cook for 2 minutes until slightly softened.
  6. Add the drained sauerkraut, pineapple chunks, and 2 tablespoons of reserved pineapple juice. Cook for 2 minutes, stirring occasionally.
  7. Remove from heat and let cool slightly for 1-2 minutes. Fold in the sour cream until completely incorporated.
  8. Transfer the mixture to the prepared baking dish. Top with shredded cheddar cheese.
  9. If using, combine crushed crackers with 1 tablespoon melted butter and sprinkle over the cheese layer.
  10. Bake uncovered for 20-25 minutes until bubbling around edges and cheese is melted and golden.
  11. Let rest for 5 minutes before serving. Garnish with green onions if desired.

  • For a milder flavor, rinse the sauerkraut thoroughly before adding to the mixture.
  • This casserole can be assembled up to 24 hours ahead, refrigerated, and baked when ready to serve.
