  • 1 1/2 pounds ground beef
  • 2 tablespoons butter
  • 2 bell peppers, thinly sliced
  • 3 shallots, sliced
  • 8 ounces mushrooms, sliced
  • 4 cloves garlic, chopped
  • 1 tablespoon freshly grated ginger
  • 1/2 cup soy sauce or tamari
  • 23 tablespoons Gochujang
  • 2 tablespoons ginger juice
  • 2 tablespoons maple syrup or honey
  • 1/4 cup toasted sesame seeds
  • Black pepper, to taste
  • 4 Persian cucumbers, chopped
  • 1 tablespoon Gochujang
  • 1/4 cup chopped green onions or Thai basil
  • 2 tablespoons ginger juice or rice vinegar
  • Pinch of salt
  • 1/3 cup chopped roasted peanuts (for serving)

Instructions

  1. Brown ground beef in a large skillet over medium heat for about 5 minutes, breaking apart until evenly browned.
  2. Add butter, bell peppers, shallots, mushrooms, garlic, and ginger. Cook for 2-3 minutes until vegetables begin to soften.
  3. Pour in soy sauce, Gochujang, ginger juice, and 1/3 cup water. Simmer for 2-3 minutes until slightly thickened.
  4. Stir in maple syrup or honey and cook for 1-2 minutes until glossy. Remove from heat and mix in sesame seeds.
  5. For cucumber salad, combine cucumbers, Gochujang, green onions or Thai basil, ginger juice or rice vinegar, and salt in a bowl. Let rest for 5 minutes.
  6. Serve beef stir fry over rice with cucumber salad on the side, topped with chopped peanuts.
