A vibrant, flavorful beet salad featuring roasted beets, crisp greens, tangy goat cheese, and crunchy walnuts, all dressed in a balsamic vinaigrette.

Ingredients

  • 4 to 5 medium beets
  • Extra-virgin olive oil, for drizzling
  • 2 cups salad greens, arugula or spring mix
  • ½ shallot, thinly sliced
  • ½ green apple, thinly sliced
  • ¼ cup toasted walnuts
  • 2 ounces goat cheese, torn
  • Microgreens, optional
  • Balsamic Vinaigrette
  • Flaky sea salt
  • Freshly ground black pepper

 

Instructions

  1. Preheat oven to 400°F. Wrap each beet in aluminum foil with olive oil, salt, and pepper.
  2. Roast beets on a baking sheet for 40-90 minutes until fork-tender. Cool in foil.
  3. Remove skins under running water when cool enough to handle.
  4. Chill peeled beets in refrigerator until ready to use.
  5. Slice beets into ¼-inch rounds and arrange on a platter with greens.
  6. Add shallots, apple slices, walnuts, and goat cheese.
  7. Garnish with microgreens if using.
  8. Drizzle with balsamic vinaigrette and season with flaky salt and pepper before serving.
