Ingredients

  • 4 to 5 medium beets
  • Extra-virgin olive oil, for drizzling
  • 2 cups salad greens, arugula or spring mix
  • ½ shallot, thinly sliced
  • ½ green apple, thinly sliced
  • ¼ cup toasted walnuts
  • 2 ounces goat cheese, torn
  • Microgreens, optional
  • Balsamic Vinaigrette
  • Flaky sea salt
  • Freshly ground black pepper

Instructions

  1. Preheat oven to 400°F. Wrap each beet in aluminum foil with olive oil, salt, and pepper.
  2. Roast beets for 40-90 minutes until fork-tender. Cooking time depends on beet size.
  3. Let beets cool, then peel skins under running water.
  4. Slice beets into ¼-inch rounds and chill until ready to use.
  5. Arrange greens on a platter, top with shallots, apple slices, beets, walnuts, and goat cheese.
  6. Add microgreens if using, drizzle with balsamic vinaigrette, and season with flaky salt and pepper.
