Blueberry Muffins

Bakery-style blueberry muffins with a buttery streusel topping, featuring juicy berries in every bite.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/2 cup butter, melted
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 2 cups (1 pint) fresh blueberries, washed, drained, and picked-over, or frozen (see note 1)
 
For the streusel topping:
 
  • 1/4 cup all-purpose flour
  • 2 tablespoons brown sugar, packed
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 2 tablespoons butter, cold

Instructions

  1. Preheat oven to 400°F. Line muffin pan with paper liners.
  2. In a large bowl, sift together flour, sugar, baking powder, and salt.
  3. Whisk eggs in a medium bowl until smooth. Add melted butter, milk, and vanilla, whisking until combined.
  4. Add wet ingredients to dry ingredients, stirring until just combined. Fold in blueberries.
  5. For streusel, combine flour, sugars, cinnamon, and salt. Cut in cold butter until mixture is crumbly.
  6. Fill muffin cups with batter and top each with about 1 tablespoon of streusel.
  7. Bake for 18-22 minutes until a toothpick inserted comes out clean with a few crumbs.
  8. Cool in pan for 5 minutes before transferring to a cooling rack.

Notes

If using frozen blueberries, do not thaw them before adding to the batter.
