  • 2 tablespoons olive oil

  • 1 teaspoon Diamond Crystal kosher salt (or ½ teaspoon Morton kosher salt or other salt)

  • ¼ teaspoon black pepper

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon smoked paprika (not regular paprika)

  • ½ teaspoon ground cumin

  • ¼ teaspoon cayenne pepper

Instructions

  1. Preheat oven to 400°F.

  2. Place chicken thighs in a large bowl. Add olive oil and all spices. Toss to coat evenly.

  3. Arrange seasoned thighs in a single layer in a 9×13-inch baking dish. Brush any leftover spice mix over the top.

  4. Bake uncovered for about 30 minutes, or until juices run clear and an instant-read thermometer reads 165°F.

  5. Rest 5 minutes before serving.

  • Chicken thighs vary in size—bake them all together and use the largest thigh as your doneness guide.
