  • to 4 pounds boneless beef chuck roast
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 1 large yellow onion, sliced
  • 8 ounces mushrooms, sliced
  • 2 large apples, cored and sliced
  • 2 tablespoons minced garlic
  • 2 tablespoons Cajun-style seasoning
  • 2 teaspoons ground allspice
  • ¼ teaspoon chipotle powder
  • 4 cups chicken broth
  • ½ cup molasses
  • ¼ cup whole-grain mustard
  • ¼ cup smooth Dijon-style mustard
  • ¼ cup pure maple syrup
  • 1 tablespoon non-alcoholic Worcestershire-style sauce
  • 6 fresh rosemary sprigs

Instructions

  1. Season beef chuck roast with salt and pepper. Rest at room temperature for 30 minutes.
  2. Preheat oven to 325°F. In a Dutch oven, heat olive oil and sear beef on all sides until well-browned.
  3. Remove beef and add onions, mushrooms, and apples to the pot. Cook until softened.
  4. Add garlic, Cajun seasoning, allspice, and chipotle powder. Cook until fragrant, about 1 minute.
  5. Pour in broth and add molasses, both mustards, maple syrup, and Worcestershire sauce. Stir to combine.
  6. Return beef to pot, add rosemary sprigs, cover, and braise in oven for 2½-3 hours until fork-tender.
  7. Rest meat for 15 minutes before slicing. Serve with sauce and apples.
