Breakfast Twice Baked Potatoes

For the potatoes:

  • 2 large baking potatoes
  • 2 teaspoons canola oil
  • 1 teaspoon kosher salt

For the filling:

  • 2 tablespoons butter
  • 1/4 cup heavy cream
  • 4 slices bacon, cooked and crumbled (divide into half)
  • 1/2 cup shredded cheddar cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon kosher salt
  • 4 large eggs
  • Salt and pepper, to taste

For garnish:

  • Minced chives

Instructions

  1. Preheat oven to 350°F. Pierce potatoes several times with a fork.
  2. Rub potatoes with oil and sprinkle with salt. Bake directly on oven rack for 1 hour or until tender.
  3. Let potatoes cool slightly, then cut in half lengthwise.
  4. Scoop out potato flesh leaving 1/4-inch shell. Place flesh in a bowl.
  5. Add butter, cream, half the bacon, cheese, and seasonings to the potato flesh. Mix until smooth.
  6. Spoon mixture back into potato shells.
  7. Create a well in each potato half and crack an egg into each. Season with salt and pepper.
  8. Sprinkle remaining bacon on top.
  9. Bake for 15-20 minutes until eggs reach desired doneness.
  10. Garnish with chives before serving.

Notes
