  • 6 cups fresh broccoli florets (about 2 bunches)
  • 10.5 ounce can cream of mushroom soup (or homemade)
  • 1 cup mayonnaise
  • 2 large eggs
  • 2 Tablespoons dried minced onion
  • 1 cup freshly grated sharp cheddar cheese
  • 1 cup cheese crackers, crushed

Instructions

  1. Preheat oven to 400°F and grease a 2-quart casserole dish.
  2. Bring a large pot of water to boil. Add broccoli and cook for 2 minutes. Drain thoroughly.
  3. In a large mixing bowl, combine mushroom soup, mayonnaise, eggs, onions, and shredded cheese. Mix well.
  4. Add drained broccoli to the mixture and gently toss until fully coated.
  5. Transfer to the greased casserole dish and spread evenly.
  6. Sprinkle crushed cheese crackers over the top.
  7. Bake for 40-45 minutes until golden brown and bubbling around the edges.
  8. Let rest for 5-10 minutes before serving.
