  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ¾ cup mashed ripe banana (about 2 small bananas)
  • 2 tablespoons melted unsalted butter (plus extra for cooking)
  • 1 large egg
  • ¾ cup buttermilk (or a suitable substitute)
  • ¼ cup packed brown sugar
  • 1 teaspoon pure vanilla extract

Instructions

  1. Whisk together flour, baking powder, and salt in a large bowl.
  2. In a separate bowl, combine mashed banana, melted butter, egg, buttermilk, brown sugar, and vanilla until well mixed.
  3. Pour wet ingredients into dry ingredients and gently stir until just combined, leaving small lumps.
  4. Heat griddle over medium-low heat and lightly grease with butter.
  5. Pour ⅓ cup batter per pancake onto griddle and cook until bubbles form on surface.
  6. Flip carefully and cook additional 2 minutes until golden brown.
  7. Serve warm with desired toppings.
