Brownies with Marshmallows

Decadent chocolate brownies topped with gooey marshmallows and a crumbled brownie topping for the ultimate sweet treat.

  • 1 cup butter, melted (regular or dairy free)
  • 1 cup granulated sugar
  • 1 cup light brown sugar
  • 1 tablespoon vanilla extract
  • 3 eggs
  • 1 cup all-purpose flour
  • 1 cup unsweetened Dutch processed cocoa powder
  • 1 teaspoon salt
  • 3 tablespoon mini chocolate chips (regular or dairy free)
  • 3½ cup mini marshmallows

Instructions

  1. Prepare an 8×8 inch pan and a loaf pan, both lined with parchment paper. Preheat oven to 350°F.
  2. Melt butter, then whisk in sugars until mixture forms a paste.
  3. Add eggs and vanilla, then whisk in flour, cocoa powder, and salt until just combined.
  4. Pour 2/3 of batter into square pan and 1/3 into loaf pan. Bake both for 27-36 minutes until toothpick shows moist crumbs.
  5. Remove pans from oven, keeping oven on. Top square pan brownies with marshmallows and return to oven for 4-8 minutes until marshmallows are golden.
  6. Break loaf pan brownies into pieces and sprinkle over marshmallow layer, pressing gently.
  7. Top with mini chocolate chips, then cool completely before slicing.

Notes

For brownies without the crumbled topping, simply use the 8×8 pan only and top with marshmallows and chocolate chips.
