Buffalo Chicken Grilled Cheese

Crispy sourdough bread filled with spicy buffalo chicken, creamy blue cheese, and melty Monterey jack cheese for the ultimate comfort food sandwich.

  • ¼ cup unsalted butter (room temperature (½ stick))
  • ¼ teaspoon garlic powder
  • ½ teaspoon dried parsley
  • 2 cups shredded cooked chicken ()
  • ½ cup Buffalo sauce
  • ⅓ cup crumbled blue cheese ()
  • 4 slices sourdough bread (cut approximately ½-inch thick)
  • 2 cups shredded Monterey jack cheese (or swiss or mozzarella)

Instructions

  1. Mix room temperature butter with garlic powder and dried parsley in a small bowl. Set aside.
  2. In a medium bowl, combine shredded chicken, buffalo sauce, and crumbled blue cheese until well mixed.
  3. Spread the butter mixture on one side of each bread slice, then place them butter-side down.
  4. Layer half of the shredded cheese on two bread slices (unbuttered side up), then evenly distribute the buffalo chicken mixture on top, and finish with remaining cheese.
  5. Top with remaining bread slices, butter-side up, to form sandwiches.
  6. Heat a large skillet over medium heat and place sandwiches in the pan. Cover with a lid and cook for about 5 minutes until golden brown.
  7. Carefully flip sandwiches, gently press down with spatula, cover again, and cook for 3-5 minutes until cheese is melted and both sides are browned.
  8. Remove from heat, let rest briefly, then slice and serve with optional blue cheese or ranch dip.

Notes
