Burrata Salad

Creamy burrata cheese with fresh vegetables, homemade croutons, and tangy balsamic dressing for a perfect appetizer or light meal.

  • 5 ounces spring mix
  • 1 pint baby tomatoes
  • ½ cup fresh basil
  • 1 avocado (diced)
  • 8 ounces Burrata cheese
  • ½ cup green onions (sliced)
  • ¼ cup balsamic vinegar
  • ¼ cup olive oil
  • 1 Tablespoon honey
  • 1 teaspoon Dijon mustard
  • pinch salt and pepper
  • 6 cups French bread (or ciabatta, sourdough, etc)
  • ¼ cup Olive oil
  • ½ teaspoon fine sea salt
  • ½ teaspoon garlic powder

Instructions

  1. Preheat oven to 350°F. Cut bread into ½” cubes or tear into pieces for a rustic look.
  2. Toss bread with olive oil, then sprinkle with combined salt and garlic powder. Mix well.
  3. Spread bread cubes in a single layer on a greased baking sheet. Bake 8-10 minutes, stirring once halfway through.
  4. Whisk together balsamic vinegar, olive oil, honey, Dijon mustard, salt and pepper until emulsified.
  5. Place spring mix in a serving bowl. Arrange tomatoes and burrata cheese on top.
  6. Add cooled croutons, green onions, basil and avocado.
  7. Season burrata with salt and pepper. Serve with dressing on the side or drizzled over the salad.
