Butter Chicken Puff Pastry Pies

  • 1 sheet frozen puff pastry, thawed
  • 2 cups cooked shredded butter chicken
  • 1/2 cup heavy cream
  • 1 tablespoon ginger-garlic paste
  • 1/4 cup fresh cilantro, chopped (plus extra for garnish)
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon tomato paste
  • 1 teaspoon garam masala
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 2 tablespoons Greek yogurt
  • 1 teaspoon honey
  • 1 tablespoon butter
  • 1/4 cup frozen green peas, thawed
  • 1/4 cup red onion, finely diced
  • 1 teaspoon nigella seeds (optional, for topping)
  • Salt to taste

Instructions

  1. Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a saucepan over medium heat, combine butter chicken, tomato paste, garam masala, cumin, turmeric, and cayenne. Cook 2-3 minutes until fragrant.
  3. Add heavy cream, ginger-garlic paste, and honey. Stir until smooth and simmer 3-4 minutes until slightly thickened.
  4. Remove from heat and fold in yogurt, butter, peas, onion, and cilantro. Season with salt and let cool completely.
  5. On a lightly floured surface, roll out puff pastry and cut into equal squares (approximately 4-5 inches each).
  6. Place a tablespoon of filling in the center of each square, leaving a 3/4-inch border.
  7. Brush edges with water, then fold diagonally to create triangles. Press edges firmly with a fork to seal.
  8. Transfer to prepared baking sheet, spacing 1 inch apart. Brush tops with beaten egg and sprinkle with nigella seeds if using.
  9. Cut a small steam vent in the top of each pie.
  10. Bake for 20-25 minutes until puffed and golden brown.
  11. Let cool on the baking sheet for 5-10 minutes before serving.
  12. Garnish with additional fresh cilantro.

  • For a time-saving hack, use leftover takeout butter chicken as your filling base.
  • Ensure filling is completely cooled before assembling to prevent soggy pastry.
