Creamy Cabbage Potato Soup

A comforting, velvety soup featuring tender cabbage and potatoes, finished with crispy bacon and fresh herbs.

 

Ingredients

  • 1 large head of cabbage, sliced into thin ribbons
  • 3 medium potatoes, diced
  • 5 cups water
  • 5 chicken bouillon cubes
  • 2 teaspoons caraway seeds
  • 4 tablespoons butter
  • 1 medium onion, chopped
  • ¾ cup heavy cream
  • Black pepper, generous pinch
  • 6 slices turkey bacon or beef bacon, cooked until crispy and crumbled
  • Chives, green onions, fresh parsley, and extra caraway seeds for garnish

Instructions

  1. Boil potatoes with water and bouillon cubes until soft, then set aside to cool slightly.
  2. While potatoes cook, crisp the bacon, then cool and crumble for topping.
  3. In the soup pot, melt butter and sauté onions until translucent.
  4. Add cabbage, caraway seeds, and black pepper, cooking until cabbage softens.
  5. Reserve one-third of the cabbage for texture later.
  6. Blend remaining cabbage with potatoes and broth until smooth.
  7. Return blended mixture to pot, add cream, and warm gently (don’t boil).
  8. Fold in reserved cabbage and serve topped with bacon and fresh herbs.
