  • For the Cajun Chicken:
  • 2 large boneless, skinless chicken breasts
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 large egg
  • 1 cup panko breadcrumbs
  • 1½ teaspoons Cajun seasoning
  • ½ teaspoon garlic powder
  • 3 tablespoons vegetable oil (or canola oil)
  • For the Cheesy Grits:
  • 2 cups whole milk
  • 2 cups chicken broth
  • ½ teaspoon salt
  • 1 cup stone-ground grits (not instant)
  • ½ teaspoon black pepper
  • ¼ cup unsalted butter
  • 4 ounces sharp cheddar cheese, shredded
  • Hot sauce, to taste

Instructions

  1. Slice each chicken breast in half lengthwise to create four thinner pieces. Pat dry with paper towels, then season with salt and pepper.
  2. Beat egg in a shallow bowl. In another bowl, mix panko breadcrumbs with Cajun seasoning and garlic powder.
  3. Dip each chicken piece in egg, then coat thoroughly with breadcrumb mixture. Set aside.
  4. In a medium saucepan, bring milk, chicken broth, and salt to a simmer. Slowly whisk in grits and reduce heat to medium-low.
  5. Cook grits for 20-25 minutes, stirring frequently, until thick and creamy. Add splashes of water if needed to prevent sticking.
  6. While grits cook, heat oil in a large skillet over medium heat. Cook breaded chicken for 3-4 minutes per side until golden and internal temperature reaches 165°F.
  7. Remove grits from heat and stir in black pepper, butter, and cheese until melted and smooth.
  8. Transfer chicken to a cutting board and slice diagonally.
  9. Serve sliced chicken over cheesy grits with hot sauce on the side.

Notes
