Cajun Chicken Sloppy Joes

Spicy, creamy, and utterly delicious Cajun chicken sloppy joes transform ground chicken into an exciting twist on a classic sandwich. Perfect for weeknight dinners!

 

Ingredients

  • 1 tablespoon oil
  • 1 tablespoon butter
  • 1 onion finely chopped
  • 1 rib celery finely chopped
  • ½ green bell pepper finely chopped
  • 1 lb ground chicken
  • 3 tablespoon cajun seasoning (see note 1)
  • 3 cloves garlic minced
  • ½ cup crushed tomatoes
  • ½ tablespoon brown sugar
  • ½1 teaspoon hot sauce optional
  • ½ cup heavy cream
  • ¼ teaspoon salt (see note 2)
  • 4 burger rolls
  • Optional toppings: sliced cheese, slaw, sour cream, shredded lettuce

Instructions

  1. Melt oil and butter in a large skillet over medium-low heat.
  2. Add chopped onion, celery, and bell pepper. Cook for 7-8 minutes until softened.
  3. Add ground chicken and cook for 5 minutes, breaking it up as you go, until no longer pink.
  4. Sprinkle over Cajun seasoning and minced garlic. Cook for 1 minute, stirring constantly.
  5. Add crushed tomatoes, brown sugar, hot sauce, and heavy cream. Mix well and reduce heat to low.
  6. Simmer for 15 minutes, stirring frequently to prevent sticking.
  7. Taste and add salt if needed.
  8. Toast burger rolls and serve with your choice of toppings.

Notes

For homemade Cajun seasoning, mix 1 tablespoon paprika, 1 teaspoon each of garlic and onion powder, ½ teaspoon each of dried oregano and thyme, and ¼ teaspoon each of black pepper and cayenne.

Salt amount depends on your Cajun seasoning’s salt content. Taste before adding.
