Bold, spicy Cajun-seasoned salmon on a bed of fresh greens with creamy tahini dressing and crunchy garlic breadcrumbs.

  • pounds salmon fillets
  • 34 tablespoons Cajun seasoning
  • 2 tablespoons olive oil or butter
  • 2 cups white bread
  • 1 garlic clove
  • 4 tablespoons butter
  • Salt
  • 6 cups mixed greens
  • 1 cup fresh herbs
  • 1 cup Parmesan
  • 3 tablespoons sesame seeds
  • 2 avocados
  • 2 tablespoons capers
  • ⅓ cup olive oil
  • 3 tablespoons sesame oil
  • ½ cup tahini
  • ¼ cup lemon juice
  • 1 tablespoon Dijon
  • 2 teaspoons savory seasoning sauce
  • 12 garlic cloves
  • ½ cup Parmesan
  • ¼½ cup water
  • Salt

Instructions

  1. Preheat oven to 450°F. Coat salmon with Cajun seasoning mixed with oil, then roast for 10-15 minutes until flaky but still moist.
  2. Make garlic breadcrumbs by toasting bread pieces with garlic, butter, and salt until golden and crispy.
  3. Blend all dressing ingredients until smooth, adding water as needed for desired consistency.
  4. Combine salad base ingredients in a large bowl and toss with half the dressing.
  5. Top dressed greens with flaked salmon and breadcrumbs.
  6. Serve with additional dressing on the side if desired.
