Ingredients

  • 2 tablespoons unsalted butter, divided
  • ½ cup finely chopped yellow onion
  • 2 garlic cloves, minced
  • ½ cup diced red bell pepper
  • ½ cup diced yellow bell pepper
  • 1 cup sliced mushrooms
  • 2 cups fresh spinach
  • ¼ cup sliced green onions (white and green parts separated)
  • pounds large shrimp, peeled and deveined
  • 2 teaspoons Cajun seasoning
  • ½ teaspoon smoked paprika
  • Zest of 1 lemon
  • 1 (14.5-ounce) can petite diced tomatoes
  • 1 cup heavy cream
  • ¼ cup chopped fresh parsley

Instructions

  1. elt 1 tablespoon butter in a large skillet over medium-high heat. Add onion and garlic, cooking for 2 minutes until fragrant.
  2. Add bell peppers and mushrooms, cooking 4-5 minutes until softened. Transfer to a bowl.
  3. Add remaining butter to skillet. Once melted, add shrimp, Cajun seasoning, paprika, and lemon zest. Cook 4-5 minutes until shrimp are pink. Remove and set aside.
  4. Pour diced tomatoes into skillet, scraping bottom. Return vegetable mixture and bring to a gentle boil. Simmer 5 minutes.
  5. Add heavy cream and simmer about 7 minutes until slightly thickened.
  6. Stir in spinach until wilted, then fold in shrimp to heat through.
  7. Garnish with green onion tops and parsley. Serve over rice, pasta, or with bread.
