These soft and chewy cake mix cookie bars are made with just 4 simple ingredients—perfect for a quick dessert that’s ready in under 30 minutes. No mixer or chilling required!
1 (15.25 oz) box yellow cake mix
⅓ cup oil or melted butter
2 large eggs (at room temperature)
1½ cups (12 oz) semisweet or milk chocolate chips
Preheat Oven
Preheat your oven to 350°F (180°C). If using a fan oven, set it to 160°C. Lightly grease a 9×13-inch baking pan or line it with parchment paper.
Mix Wet Ingredients
In a large mixing bowl, whisk the eggs and oil or melted butter until combined and smooth.
Add Cake Mix
Stir in the cake mix using a spatula or wooden spoon. The dough will be thick and sticky—this is normal.
Fold in Chocolate Chips
Gently fold in the chocolate chips until evenly distributed throughout the dough.
Press into Pan
Spread and press the dough evenly into the prepared pan using the spatula. Take your time to level the surface.
Bake
Bake for 20–25 minutes, or until the edges are golden brown and the center is just set. Don’t overbake.
Cool and Slice
Let the bars cool completely in the pan. Once cooled, slice into 16 squares and enjoy!
For chewier bars, slightly underbake and let them cool in the pan.
Use melted butter for a richer, bakery-style flavor.
Add 1 teaspoon vanilla extract or a pinch of salt to enhance flavor.
Store in an airtight container for up to 5 days at room temperature.
Freeze individually wrapped bars for up to 2 months.
