Carrot Apple Salad

Ingredients

  • 3 cups peeled carrots – shredded
  • 3 cups peeled apples (about 3) – shredded and drained
  • ½ cup currants or raisins
  • 2 tablespoons fresh chopped parsley
  • ½ cup mayonnaise
  • 2 tablespoons white vinegar
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • 2 tablespoons sugar
  • ½ teaspoon fresh ground pepper

Instructions

  1. Shred carrots and apples using a box grater.
  2. Place grated apples in a strainer or paper towels and press to drain excess juice.
  3. In a large bowl, combine carrots, apples, currants, and parsley.
  4. In a small bowl, whisk together mayonnaise, vinegar, lemon juice, salt, sugar, and pepper.
  5. Pour dressing over the carrot and apple mixture.
  6. Gently mix until all ingredients are evenly coated.
  7. Serve immediately or chill until ready to serve.
