  • 1/2 cup hoisin-style sauce
  • 1/4 cup soy sauce or tamari
  • 12 tablespoons maple syrup
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon chili sauce
  • Black pepper
  • Red chili flakes
  • 1 teaspoon lemon zest
  • 3 tablespoons sesame oil or olive oil
  • 1 1/2 pounds ground chicken
  • 1 tablespoon cornstarch or arrowroot powder
  • 1 teaspoon paprika
  • 1 1/2 cups broccoli florets
  • 1 cup sliced mushrooms
  • 3 tablespoons butter
  • 34 garlic cloves, chopped
  • 1 tablespoon fresh ginger, minced
  • 1 cup cashews
  • 1/3 cup chopped pickled ginger
  • 4 green onions, chopped

Instructions

  1. Whisk hoisin sauce, soy sauce, maple syrup, apple cider vinegar, chili sauce, black pepper, red chili flakes, and lemon zest in a bowl. Set aside.
  2. Heat oil in a large skillet over medium-high heat. Add chicken and sprinkle with cornstarch and paprika. Cook, breaking it apart, until no longer pink (5-7 minutes).
  3. Add butter, garlic, ginger, and cashews to the skillet. Cook for 1-2 minutes until fragrant.
  4. Pour two-thirds of the sauce into the skillet. Stir well and simmer for 2-3 minutes until slightly thickened.
  5. Add broccoli, mushrooms, and pickled ginger. Stir to combine, cover, and cook for 3-4 minutes until vegetables are tender-crisp.
  6. Serve over rice, garnished with green onions and drizzled with remaining sauce.
