  • 1 head of cauliflower, cut into small florets
  • 1 cooked rotisserie chicken, shredded
  • 3 Tablespoons unsalted butter
  • 4 Tablespoons flour
  • 2 cups of milk
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup shredded gruyere cheese
  • 1 cup shredded mild cheddar cheese
  • 3 cups fresh spinach
  • 1 cup chopped mushrooms
  • 1/4 cup panko bread crumbs

Instructions

  1. Preheat oven to 375°F. Bring a large pot of water to boil.
  2. Add cauliflower florets to boiling water, cook for 5 minutes, then drain well.
  3. Melt butter in large sauté pan over low heat. Whisk in flour, then slowly add milk while whisking continuously.
  4. Stir for 3-4 minutes, then increase heat to medium. Add salt and pepper.
  5. Stir in both cheeses until completely melted and smooth.
  6. Add spinach, mushrooms, cauliflower, and shredded chicken. Cook for 5 minutes.
  7. Transfer mixture to a 9×9 casserole dish and top with panko breadcrumbs.
  8. Cover with foil and bake for 20 minutes. Remove foil and bake for additional 20 minutes until golden and bubbling.
