Instructions
Preheat oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish.
Melt butter in a medium saucepan over medium heat.
Add flour to melted butter, whisking continuously to form a smooth paste (roux). Cook for 1 minute, stirring constantly.
Gradually add milk to the roux, pouring slowly while whisking vigorously to prevent lumps. Simmer until thickened, about 2-3 minutes.
Reduce heat to low and stir in 1 cup of shredded cheddar cheese until completely melted and smooth. Season with salt, pepper, and optional seasonings.
In a large mixing bowl, combine the shredded chicken, blanched broccoli, and boiled potatoes. Pour the prepared cheese sauce over and fold gently until evenly coated.
Transfer mixture to the prepared baking dish and spread into an even layer. Top with remaining ½ cup shredded cheese and optional breadcrumb mixture.
Bake uncovered for 25-30 minutes, until bubbling around edges and golden brown on top.
Remove from oven and let rest 5 minutes before serving.
Notes
For best results, use freshly shredded cheese rather than pre-packaged shredded cheese to avoid a grainy sauce.
Rotisserie chicken works wonderfully in this recipe and saves preparation time.
