  • 2 cups of corn
  • 1/4 cup cornmeal
  • 1/4 cup all-purpose flour
  • 1 teaspoon smoked paprika
  • 1 egg
  • 1 green onion (chopped)
  • 1/2 cup grated parmesan or cheese of your choice
  • 1 handful cilantro (chopped)
  • 1 tablespoon lime juice
  • Salt and fresh cracked pepper to taste
  • 1 tablespoon oil
  • Sour or heavy cream, for garnish

Instructions

  1. Combine corn, cornmeal, flour, paprika, egg, cheese, green onion, cilantro, and lime juice in a large bowl. Mix thoroughly until evenly incorporated.
  2. Heat oil in a skillet over medium heat until shimmering but not smoking.
  3. Scoop spoonfuls of mixture into the hot pan, flattening slightly into patties.
  4. Cook for approximately 4 minutes per side, until golden brown and crispy.
  5. Transfer to a paper towel-lined plate to absorb excess oil.
  6. Serve warm with a dollop of sour cream or heavy cream.
