Cheesy Ranch Potatoes

Creamy, cheesy potatoes coated in zesty ranch dressing and topped with crispy bacon for the ultimate comfort food side dish.

  • 3 Large Potatoes, Cubed into 1/2 inch pieces
  • 1 Cup Ranch Dressing
  • 1/4 Cup Sour Cream
  • 1/2 teaspoon Salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Onion Powder
  • 1/4 teaspoon Paprika
  • 1 Cup Shredded Cheddar Cheese
  • 6 Slices Bacon

Instructions

  1. Preheat oven to 400°F. Place cubed potatoes in pot with cold water and bring to boil.
  2. Reduce to medium-high heat and boil potatoes 8-10 minutes until just tender.
  3. Combine ranch dressing, sour cream, seasonings, and half the cheese in a bowl.
  4. Drain potatoes and transfer to 9×9 inch baking dish or cast iron skillet.
  5. Pour ranch mixture over potatoes and stir to coat evenly.
  6. Bake for 15 minutes until hot and bubbly.
  7. While potatoes bake, cook bacon until crisp. Drain and crumble when cool.
  8. Top potatoes with remaining cheese and bacon. Bake 3 more minutes until cheese melts.
  9. Let stand 5 minutes before serving.
