  • 200g fresh cherries, pitted and halved
  • 60g cherry preserves (optional)
  • 50g toasted sliced almonds (optional, for garnish)

Instructions

  1. Preheat your oven to 325°F (165°C). Line a 9-inch springform pan with parchment paper and lightly grease the sides.
  2. In a medium bowl, combine graham cracker crumbs with melted butter until the mixture resembles wet sand. Press firmly into the bottom of the prepared pan using a flat-bottomed measuring cup.
  3. In a large mixing bowl, beat the softened cream cheese until completely smooth and fluffy, about 2-3 minutes.
  4. Gradually add the sugar, continuing to beat until the mixture is light and airy. Scrape down the sides of the bowl frequently.
  5. Add eggs one at a time, beating well after each addition until fully incorporated. Mix in vanilla extract, and if using, almond extract and lemon zest.
  6. Gently fold in heavy cream using a spatula. If using sour cream, fold that in as well. The batter should look silky smooth.
  7. Pour the filling over your prepared crust, smoothing the top with an offset spatula.
  8. Place the springform pan on a baking sheet and bake for 45-50 minutes, until the edges are set but the center still has a slight jiggle.
  9. Turn off the oven, crack the door open, and allow the cheesecake to cool in the oven for 1 hour.
  10. Remove from oven and cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
  11. Once chilled, arrange fresh pitted and halved cherries over the top. For enhanced cherry flavor, warm cherry preserves until pourable, then brush over the fresh cherries.
  12. If desired, sprinkle with toasted almonds before serving.
