  • 46 tablespoons (56g-84g) unsalted butter, divided
  • 8 ounces (226.8g) cremini mushrooms, sliced
  • 1 medium onion, diced
  • 2 teaspoons (2g) fresh thyme, minced
  • 2 teaspoons (10g) garlic, minced
  • ⅓ cup (41.67g) all-purpose flour
  • 1 cup half and half, (½ cup cream and ½ cup milk)
  • 2¼ cups (562.5ml) chicken broth
  • 1 rib celery, sliced
  • 2 medium carrots, sliced (about 1 cup)
  • 45 cups (540g-675g) cooked chicken, cut in chunks
  • 1 cup (150g) frozen peas
  • 4 ounces (113.4g) chopped pimento
  • 1 tablespoon (4g) fresh parsley, minced
  • salt and pepper to taste

Instructions

  1. Melt 2-3 tablespoons butter in large pan over medium heat. Cook mushrooms until soft (4-5 minutes). Remove and set aside.
  2. Melt remaining butter in same pan. Add flour and stir for 1 minute to make roux.
  3. Add onions, thyme, and garlic. Cook 4-5 minutes until tender.
  4. Gradually whisk in half and half and chicken broth until smooth. Bring to boil and cook 2 minutes until thickened.
  5. Add celery and carrots, cook 3-5 minutes until slightly tender.
  6. Return mushrooms to pot with chicken, peas, pimentos, and parsley. Season with salt and pepper.
  7. Simmer 2-3 minutes until heated through. Adjust seasoning and consistency as needed.
