Cheesy Chicken and Rice Casserole

  • 2 cups cooked chicken, shredded
  • 1 cup cooked rice
  • 1 cup broccoli florets, blanched
  • 1 cup shredded cheddar cheese
  • 1 can (10.5 oz) cream of chicken soup
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup onion, finely diced (optional)
  • 2 cloves garlic, minced (optional)
  • ⅓ cup sour cream (optional)
  • 1 tablespoon Dijon mustard (optional)
  • ½ teaspoon dried thyme (optional)
  • ½ teaspoon paprika (optional)
  • ½ cup crushed butter crackers or breadcrumbs (optional topping)
  • 2 tablespoons melted butter (optional for topping)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. If using onions and garlic, sauté in a tablespoon of oil until soft and fragrant.
  3. In a large bowl, combine chicken, rice, broccoli, cream of chicken soup, salt, pepper, and all optional ingredients except topping.
  4. Mix well until everything is evenly coated with the creamy mixture.
  5. Transfer to the prepared baking dish and spread evenly.
  6. Sprinkle shredded cheddar cheese over the top.
  7. If using the cracker topping, combine crushed crackers with melted butter and sprinkle over the cheese.
  8. Bake for 25-30 minutes until bubbling and golden brown on top.
  9. Let rest for 5 minutes before serving to allow the casserole to set.

Notes

  • For a quicker prep, use rotisserie chicken and pre-cooked rice.
  • This casserole freezes well for up to 3 months. Thaw overnight in the refrigerator before reheating.
