  • 6 tablespoons salted butter
  • 2 cups small-cubed ham
  • 1 1/4 cups grated Swiss cheese
  • 1 1/4 cups grated Monterey Jack cheese
  • 4 cooked boneless, skinless chicken breasts, cut into cubes
  • 1/2 cup panko breadcrumbs
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1 cup chicken broth
  • 2 tablespoons Dijon mustard
  • 1/2 teaspoon cayenne
  • Kosher salt and freshly ground black pepper

Instructions

  1. Preheat oven to 350°F. Grease 9×13-inch baking dish with 1 tablespoon butter.
  2. Microwave ham on paper towels for 3 minutes to reduce moisture.
  3. Combine Swiss and Monterey Jack cheeses in a bowl.
  4. Layer 1/3 of chicken in baking dish, top with half the ham and 1/4 cup cheese. Repeat layers once, finishing with remaining chicken.
  5. Melt remaining 5 tablespoons butter. Mix half with panko in a bowl; set aside.
  6. Add flour to remaining butter in skillet; cook 2-3 minutes, whisking constantly.
  7. Gradually whisk in milk, broth, Dijon, and cayenne. Cook until thickened.
  8. Remove from heat; stir in 1 cup cheese until melted. Season with salt and pepper.
  9. Pour sauce over casserole. Top with remaining cheese and panko mixture.
  10. Bake 25-30 minutes until browned and bubbling.
