  • ½ cup plain full-fat Greek yogurt
  • ¼ cup olive oil
  • ¼ cup fresh lemon juice
  • 5 garlic cloves, finely minced
  • 1 tablespoon smoked paprika
  • 1 tablespoon fresh oregano, chopped
  • ¾ teaspoon salt
  • ½ teaspoon black pepper

  • 2 red bell peppers, sliced
  • 6 pita breads
  • Tzatziki sauce
  • Pickled red onions
  • Radishes
  • Shredded lettuce
  • ¼ cup olive oil
  • 2 garlic cloves
  • 3 tablespoons oregano
  • ½1 teaspoon cayenne
  • 4 russet potatoes
  • ½ cup crumbled feta

Instructions

  1. Combine yogurt, olive oil, lemon juice, garlic, paprika, oregano, salt, and pepper for marinade. Coat chicken and peppers, refrigerate 1-8 hours.
  2. Preheat oven to 425°F. Roast chicken and peppers for 20-25 minutes until cooked through.
  3. Mix ¼ cup olive oil with garlic, oregano, and cayenne. Cut potatoes into fries, toss with seasoned oil.
  4. Bake fries for 30-35 minutes until crisp, turning halfway through. Sprinkle with feta while hot.
  5. Let chicken rest 5 minutes before slicing. Warm pitas briefly in oven.
  6. Assemble gyros with tzatziki, chicken, peppers, and toppings. Serve with Greek fries.

Notes
