Herb-Infused Chicken Leg Marinade

A vibrant, fresh herb marinade that transforms ordinary chicken into a flavor-packed meal.

 

Ingredients

  • 1/2 cup fresh cilantro
  • 1/2 cup fresh parsley, chopped
  • 1 tablespoon fresh oregano
  • 1 small shallot, peeled
  • 2 cloves garlic, peeled
  • 1/2 jalapeño pepper, seeded
  • 1 tablespoon lemon juice
  • 1 tablespoon vinegar
  • 1/2 cup oil
  • 1 teaspoon salt
  • Fresh ground black pepper, to taste
  • 2 pounds boneless chicken thighs

Instructions

  1. Combine cilantro, parsley, oregano, shallot, garlic, and jalapeño in a food processor.
  2. Add lemon juice, vinegar, oil, salt, and pepper, then pulse until finely chopped but still slightly textured.
  3. Reserve most of the marinade for serving. Use about 1/4 cup to coat chicken thighs in a shallow dish, then cover and refrigerate for 2-4 hours (20 minutes minimum, 24 hours maximum).
  4. Before cooking, let chicken rest at room temperature while heating grill to medium-high.
  5. Grill chicken for 5-6 minutes per side until internal temperature reaches 165°F and juices run clear.
  6. Serve with reserved herb sauce on the side.
