Chicken Lo Mein

This easy chicken lo mein delivers authentic Chinese restaurant flavor at home with tender chicken, crisp vegetables, and perfectly saucy noodles.

 

Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground chicken
  • 1 tablespoon fresh ginger, finely grated
  • 4 garlic cloves, minced
  • ½ teaspoon chili flakes
  • Black pepper, to taste
  • 3 cups mixed stir-fry vegetables (carrots, bell peppers, zucchini, broccoli)
  • ½ cup chopped green onions
  • ¼ cup fresh basil leaves, torn
  • 12 ounces lo mein noodles or spaghetti
  • ⅓ cup soy sauce or tamari
  • 3 tablespoons hoisin sauce
  • 1 tablespoon toasted sesame oil
  • 3 tablespoons water
  • 12 tablespoons toasted sesame seeds
  • Extra green onions or basil for serving (optional)

Instructions

  1. Cook noodles according to package directions until al dente. Drain, rinse lightly, and set aside.
  2. Heat oil in a large wok or skillet over medium-high heat. Add ground chicken, breaking into small pieces as it cooks.
  3. When chicken is halfway cooked, add ginger, garlic, chili flakes, and black pepper. Continue cooking until chicken is done.
  4. Add vegetables and half the green onions. Stir-fry for 2-3 minutes until vegetables begin to soften.
  5. Whisk together soy sauce, hoisin sauce, sesame oil, and water in a small bowl.
  6. Pour sauce into the skillet and simmer for 1 minute.
  7. Add cooked noodles and toss until everything is coated with sauce. Fold in basil leaves.
  8. Serve topped with sesame seeds and remaining green onions.
