Classic Chicken Marsala

  • 4 boneless chicken breasts, thinly sliced (about 1.5 lbs)
  • 1/2 cup all-purpose flour
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons butter, divided
  • 8 oz mushrooms (cremini or button), sliced
  • 3/4 cup dry marsala wine
  • 1/2 cup low-sodium chicken broth
  • 2 tablespoons fresh parsley, chopped
  • 23 cloves garlic, minced (optional)
  • 1 medium shallot, finely diced (optional)
  • 1 teaspoon fresh thyme, chopped (optional)
  • 1/4 cup heavy cream (optional, for a creamier sauce)

Instructions

  1. If chicken breasts are thick, place between plastic wrap and gently pound to 1/4-inch thickness.
  2. Season chicken generously with salt and pepper on both sides.
  3. Place flour in a shallow dish and lightly coat each piece of chicken, shaking off excess.
  4. Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
  5. Add chicken and cook for 3-4 minutes per side until golden brown. Transfer to a plate and cover loosely.
  6. Add remaining tablespoon of butter and mushrooms to the same pan. Cook for 4-5 minutes until golden brown.
  7. Pour in the Marsala wine, scraping up any browned bits from the bottom of the pan. Let reduce by half, about 2-3 minutes.
  8. Add chicken broth and simmer for 3 minutes until the sauce begins to thicken slightly.
  9. Return chicken to the pan along with any accumulated juices. Spoon sauce over chicken and simmer 2-3 minutes until chicken is cooked through.
  10. Taste and adjust seasoning as needed. Garnish with freshly chopped parsley before serving.

  • For the most authentic flavor, use dry Marsala wine rather than sweet.
  • Serve over pasta, polenta, or rice to soak up the delicious sauce.
  • For a gluten-free version, substitute the all-purpose flour with rice flour or a gluten-free flour blend.
