Slow Cooker Chicken Mushroom Wild Rice

A comforting one-pot meal combining tender chicken, earthy mushrooms, and nutty wild rice, finished with crispy sage butter for maximum flavor.

 

Ingredients

  • 1 ½ cups wild rice blend
  • 1 yellow onion, chopped
  • 2 carrots, cut into 1-inch chunks
  • 2 cups mushrooms, sliced (cremini, button, shiitake, or a mix)
  • 1 cup celery, chopped
  • 1 tablespoon dried parsley
  • 2 tablespoons olive oil, divided
  • 3 ½ cups low-sodium chicken broth
  • 2 pounds boneless chicken breasts or thighs
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika
  • ¼ teaspoon cayenne pepper
  • 6 garlic cloves, smashed
  • Salt and black pepper, to taste
  • 1 Parmesan rind, optional (adds richness)
  • 4 tablespoons butter
  • 8 fresh sage leaves

Instructions

  1. Add wild rice blend, onion, carrots, mushrooms, celery, and dried parsley to your slow cooker. Season with salt and pepper, add 1 tablespoon olive oil, and toss to combine. Pour chicken broth over everything.
  2. Mix remaining olive oil with thyme, rosemary, paprika, cayenne, salt, and pepper in a bowl. Coat chicken pieces in this mixture.
  3. Place seasoned chicken on top of the rice mixture. Add smashed garlic and Parmesan rind (if using).
  4. Cover and cook on LOW for 5-6 hours or HIGH for 2-3 hours, until rice is tender and chicken is cooked through.
  5. Preheat broiler. Remove chicken and garlic from slow cooker and place on a baking sheet.
  6. Arrange butter pieces and sage leaves around the chicken. Broil 1-3 minutes until sage crisps and chicken edges turn golden.
  7. Peel roasted garlic, chop finely, and mix into the melted butter. Toss chicken in this garlic-sage butter.
  8. Fluff the wild rice mixture. Serve chicken over rice and drizzle with remaining sage-garlic butter.
