Ingredients

  • 1 pound fresh broccoli, stems and florets separated
  • 4 cups chicken broth
  • 2 cups water
  • 34 garlic cloves, smashed
  • 1 teaspoon kosher salt

Freshly ground black pepper, to taste

  • 1/4 teaspoon ground nutmeg
  • 3/4 cup orzo or ditalini pasta
  • 2 cups shredded cooked chicken
  • 2 cups baby spinach

For Serving:

  • Finely grated Parmesan cheese
  • Extra virgin olive oil

Instructions

  1. Add broccoli stems and florets to a large soup pot with chicken broth, water, garlic, salt, and pepper.
  2. Bring to a boil, then lower to a simmer. Cover and cook for 30 minutes to infuse broth with flavor.
  3. Stir in orzo and cook uncovered for 15 minutes, stirring frequently to prevent sticking.
  4. Add shredded chicken and heat through for a few minutes.
  5. Stir in spinach until wilted, about 1 minute. Adjust seasoning with salt, pepper, or nutmeg.
  6. Serve topped with grated Parmesan and a drizzle of olive oil.
