Chicken Schnitzel with Garlic Dressing

  • 2 chicken breast cutlets (about 8 oz each)
  • 1 cup all-purpose flour
  • 2 large eggs, beaten with 1 tablespoon water
  • 1 cup breadcrumbs (preferably panko)
  • 2 cloves garlic, minced (divided)
  • 2 tbsp fresh lemon juice
  • 2 tbsp fresh parsley, chopped
  • 1 tsp salt (divided)
  • 1/2 tsp freshly ground black pepper (divided)
  • 1/4 cup olive oil for pan-frying, plus 2 tbsp for dressing
  • Optional breadcrumb additions: 1/2 tsp paprika, 1 tsp lemon zest, 2 tbsp grated Parmesan
  • Optional dressing additions: 1 tsp Dijon mustard, 1 tbsp fresh dill, 2 tbsp Greek yogurt

Instructions

  1. Place chicken cutlets between plastic wrap and pound to 1/4-inch thickness. Season with 1/2 tsp salt and 1/4 tsp pepper.
  2. Set up breading station: flour in first dish, beaten eggs in second, and breadcrumbs mixed with half the minced garlic in third.
  3. Dredge each cutlet in flour, shake off excess, dip in egg, then coat thoroughly with breadcrumb mixture.
  4. Place breaded cutlets on a wire rack and rest for 5 minutes to help coating adhere.
  5. Heat 1/4-inch olive oil in a large skillet over medium heat until shimmering (about 350°F).
  6. Carefully add cutlets and cook until golden brown, about 3-4 minutes per side, until internal temperature reaches 165°F.
  7. Transfer to paper towel-lined plate briefly, then move to wire rack.
  8. Prepare garlic dressing by whisking together remaining minced garlic, lemon juice, parsley, 1/4 tsp salt, and 2 tbsp olive oil.
  9. Serve schnitzel immediately with garlic dressing drizzled over top or on the side.

  • For maximum crispiness, don’t crowd the pan when frying – cook in batches if needed.
  • The breading can be enhanced with herbs and spices like paprika, lemon zest, or Parmesan cheese.
