Chicken Tocino

A sweet and savory Filipino breakfast meat that’s perfect with garlic fried rice and eggs.

 

Ingredients

  • 500 g chicken thigh fillet cut into pieces
  • 12 cloves garlic chopped
  • 2/3 cup brown sugar
  • ½ cup canned pineapple juice
  • 3 tbsp soy sauce
  • 3 tbsp white vinegar
  • 3 tsp salt
  • 2 tsp ground black pepper
  • Few drops of red food coloring (optional)
  • Cooking oil for frying

Instructions

  1. Mix garlic, brown sugar, pineapple juice, soy sauce, vinegar, salt, pepper, and food coloring (if using) in a bowl.
  2. Add chicken pieces to the marinade and mix well to coat thoroughly.
  3. Cover and refrigerate overnight or for at least 12 hours.
  4. Heat oil in a non-stick pan over medium heat.
  5. Add marinated chicken along with some marinade liquid.
  6. Cook for 10-15 minutes, turning occasionally until caramelized and cooked through.
  7. If the pan becomes dry, add a little water or remaining marinade to prevent burning.
  8. Serve hot with garlic fried rice, fried eggs, and vinegar dipping sauce.
