Chicken Vegetable Soup Recipe

  • 12 tablespoons olive oil
  • lbs. chicken, see notes
  • Salt/Pepper
  • 2 tablespoons butter
  • 1 small yellow onion, diced
  • ¾ cup carrots, diced
  • 2 ribs celery, diced
  • 3 cloves garlic, minced
  • 1 teaspoon hot sauce
  • 1 teaspoon Worcestershire sauce
  • 7 cups chicken broth
  • 1½ cups frozen mixed vegetables, (corn/green beans)
  • 1 teaspoon dried parsley
  • ½ teaspoon EACH: Dried basil, oregano, mustard powder
  • ¼ teaspoon pepper

Instructions

  1. Season chicken with salt and pepper. Heat olive oil in a soup pot over medium-high heat and sear chicken for 3 minutes per side until golden. Remove and rest for 10 minutes before dicing.
  2. Melt butter in the same pot. Add onions, carrots, and celery; sauté for 5 minutes until softened.
  3. Add garlic, hot sauce, Worcestershire sauce, and seasonings. Stir to combine.
  4. Pour in chicken broth and bring to a boil. Reduce to simmer, return chicken to the pot, and cook for 15 minutes.
  5. Add frozen vegetables, partially cover, and simmer for 10-15 more minutes until vegetables are tender.
  6. Taste, adjust seasonings if needed, and serve hot.

Notes
