Chicken and Waffle Breakfast Casserole

A delicious make-ahead breakfast casserole featuring crispy popcorn chicken, fluffy waffles, and a sweet maple-cinnamon egg custard.

  • 24 oz frozen popcorn chicken, Tyson
  • 10 frozen waffles, Kodiak Cakes Buttermilk & Vanilla
  • 6 large eggs
  • 3/4 cup egg whites
  • 1 ¼ cup milk, Fairlife skim
  • 2 tsp ground cinnamon
  • 1 tbsp honey, or maple syrup
  • 1/2 tbsp salt
  • 1 tbsp maple syrup, for drizzling on top
  • cooking spray

Instructions

  1. Slightly thaw the frozen chicken while preparing other ingredients.
  2. Preheat oven to 350°F. Toast waffles according to package directions.
  3. Whisk together eggs, egg whites, milk, honey, salt, and cinnamon in a medium bowl.
  4. Cut each waffle into six bite-sized pieces and set aside.
  5. Slice semi-frozen chicken into ~1-inch pieces.
  6. Coat a 9×13 baking dish with cooking spray. Arrange chicken and waffle pieces evenly in the dish.
  7. Pour egg mixture over everything. Brush maple syrup on top and cover with foil.
  8. Bake for 50 minutes until egg mixture is set and top is golden brown.
  9. Let cool for 5-10 minutes before serving with additional maple syrup if desired.
